What is the data format used when exporting data from Dynamics to Excel

FIX:
The procedure that is doing the export to Excel (adm2/exportdata.p internal procedure ExportToExcel)
does that using the data types as taken from the data source and the interpretation of the format is left entirely to Excel.
Therefore, unless you create your own export procedure and customize the output format specific to that data,
the only option is to reformat the data column directly in Excel, once the data has been exported from Dynamics.
