My application is deployed in an n-tier environment and I need the .jar files from Sonic for my Sonic Adapter. Can I copy the .jar files between platforms as long as the OpenEdge version is the same?

Yes. JAR (Java Archive) is a platform-independent file format that aggregates many files into one.
The files can be copied between platforms and due to the platform independence of Java there should be no problems running the .jar files.
